Canning

Welcome! These are some of the things I have preserved over the years. Some of the recipes are new yet some have been passed down from my family. I have gathered these recipes from many different sources.

You just may see something here that you've seen on another blog. When you come across something that looks so good or has such rave reviews you just have to try them yourself. That's exactly what I am doing here.

I am trying my best to come up with a good balance of recipes with photos. My children want to continue to pass along recipes that they have grown up on and it's my goal to document each and every one the best that I can. I still consider myself as a beginner canner eventhough I have canned for years. I don't claim to know it all I'm still learning each and everytime I try a new recipe. I learn new techniques and new rules and much much more. My goal here is to simply share my recipes and knowledge with others. I hope that you find my recipes and photos helpful in your canning experience.

HOW TO PRESSURE CAN
I have been asked by several new canners what to look for when the canner has come to a proper pressure. So since I can't figure out yet how to edit my video, I went online and found someone that did have a video with what I like to see when my canner comes to the proper pressure. See video here.

    1. Pam,

Any bean will work just fine. Should taste yummy. I'm going to make some with a mix of beans.

      Have fun canning!

    2. Hey, thanks for your quick reply. I am new at this canning. Have done salsa verde with the tomatillos, regular salsa with the toms, etc. Have a bunch of brussel sprouts yet to blanch and freeze. Gardening is over for here in the north west. But figure I can do the beans, chicken soup and so on in the meantime.

    3. Welcome to the canning world. This time of year my garden has been done for a while and I do up all the things that I freeze when I get overwhelmed, I also do the soups, and do some jelly making.

I should be posting a few more recipes soon.

    1. I sure wish I lived in an area that had Elk. I haven't tried canning pork or salmon yet but it sure is on my list!

  3. Can you clarify the switch from flour to clear gel in the hot pepper butter. Do you add the 1 cup of water with the clear gel , then the mustard then the remaining 1/2 cup of water?
